So your sweet little baby is now a budding toddler eh? With a mind of their own about what they do and do NOT want?

Mine too.

Our biggest struggle when it comes to Jacob and his newfound independence (and use of the word no) has been at the table.

Jacob do you want waffles? No.
Do you want toast? No.
Do you want eggs? No.
Do you want apple? No.
What do you want? No.


Seriously, this kid used to eat EVERYTHING. As a baby we transitioned him from breastfeeding to bottle feeding when I returned to work and then as he grew started introducing fruits, vegetables, and meats. He wasn't picky at all. He'd eat everything from broccoli to fish to steak. Whatever was on our plates, he wanted it.

Over the last few months that enthusiasm has wavered. It's started to taper off and he now
only willingly eats a handful of foods, including some that aren't so great for him. For breakfast we can usually rely on toaster waffles, banana, eggs, or cereal. For lunch and dinner he likes pizza, grilled cheese and PBJ sandwiches, chicken nuggets, macaroni, and ravioli.


Like I said, not the healthiest choices. I miss my little veggie lover! Food regularly ends up on the floor for our dogs to clean up if he decides that on this particular day he no longer likes the things he liked the day before. Or if he changes his mind about something mid-meal. It's frustrating to say the least, but we pick and choose our battles.

  5. My "go to" meal for the kids lately is chicken nachos... Spread shredded taco seasoned chicken over corn tortilla chips and shred a block of cheese over the chips. Bake at 350 for 20 minutes. Serve with sour cream, beans, tomatoes, black olives, the works... My kids LOVE this. Side note- it sounds a little gross but a friend introduced me to the short cut of canned shredded chicken. SO easy and quick.

  6. My favorite go-to meal is chicken pot-pie. He likes it and has tons of vegetables and chicken. My go-to snack is apples slices.
