MPM: Oct. 31 - Nov. 6

Once again we didn't make it to all the meals I had planned. We had a few nights of easy meals like freezer pizza, chicken tenders, and macaroni and cheese. This week I'm not planning anything new, I'm just going with what didn't get eaten from last week and some easy stuff.

Monday: CheeseBurger Pasta
Tuesday: Grilled Balsamic Brushetta Chicken
Wednesday: Crock Pot Mac N Cheese
Thursday: Creamy Chicken and Rice Soup
Friday: Chicken Gyros
Saturday: Grilled Cheese and Tomato Soup
Sunday: Burgers on the Grill

MPM Oct. 24 - 30

I'm going to get really honest here. Of the 7 meals I planned for last week, we ate exactly two. Pulled pork, and Creamy Chicken and Rice Soup. This week we'll be eating the rest that I had planned plus a few new recipes.

Monday: Tuscan Pasta with Tomato Basil Cream Sauce
Tuesday: Crispy Chicken with creamy italian sauce and bowtie pasta
Wednesday: Grilled Balsamic Brushetta Chicken
Thursday: Cheeseburger Pasta
Friday: Sweet Potato Chili and Tender Cornbread
Saturday: Chicken Gyros
Sunday: Crock Pot Mac N Cheese

Tuesday: Oven Baked Ham and Cheese Sliders

Spice Rubbed Beer Can Chicken

Here's a recipe sure to amaze your friends and families, and taste buds too! You need: a pantry full of spices, olive oil, a whole chicken and a can of beer.

Here's what you do:

1. Turn on ONE side of your grill. Let it heat up to medium- high

2. Open your beer and drink half.

3. Rub down your chicken with the spice mix

4. Place chicken on top of the can of beer

5. Place beer and chicken in a drip pan on the grill on the OPPOSITE side away from the flames

6. Unless you like pyro-technics. Then by all means, put the chicken on top of the flame.

Notice:

7. Let it cook for an hour (we threw some foil wrapped potatoes in there too)

8. Remove from the grill, take the chicken off the beer and cover with foil to sit for ten minutes.

9. Carve and Enjoy!

It's delicious. Can you really go wrong with chicken and beer???

I'm going to go ahead and admit that we've been awful about following a menu plan. And we've been eating fast food a lot as a result. Some days just feel too busy and tiring to do ANYTHING. I'm going to try to be better this week by making things that are relatively easy. Many of these are repeats from previous weeks when I never got around to them.....

Wednesday: Crock Pot Chicken and Dumplings
Thursady: BBQ Ranch Chicken Tostadas
Friday: Pizza Night
Saturday: Beef Stroganoff in the Crock Pot
