Toddler Eats: Chunky Monkey Waffles

From the minute Jacob wakes up in the morning, he has one thing on his mind: breakfast. For a while the ONLY thing he would eat was waffles. He'd wake us up every single morning and the first thing out of his mouth would be "waffles." His tastes are a little more varied now and we can get in things like bacon and eggs, but he still loves waffles most of all.


One good thing about his waffle obsession is that it prompted me to come up with new and fun ways to make waffles so that he wasn't always eating the same plain waffle for breakfast. One of his favorite recipes that I came up with is "Chunky Monkey Waffles." These are a quick easy meal to throw together for breakfast on those busy school mornings, or even a fun after school snack!


They are so simple to make! All you need is an Eggo Chocolate Chip waffle, peanut butter, banana, and a few chocolate chips.


We're going to use the peanut butter as syrup so here's a kitchen hack for you:
To get peanut butter smooth, thinned out, and easy to pour, simply microwave a small bowl of it in the microwave for 30 seconds, stirring halfway through. Once the 30 seconds are up it should be thin and after a good stir ready to use like syrup.

To make Chunky Monkey Waffles simply start with one (or more!) Eggo Chocolate Chip Waffles, lightly toasted.


Pour the peanut butter that you microwaved over it as syrup


Then slice your bananas and pile them on top


To finish it off, sprinkle a few chocolate chips on top just for fun!


Then dig in!!
