It's almost here..... so close I can taste it..... hurry up sweet summer!
Our Kindergartners graduated today and the next four days will be all about fun! I'm planning a few projects for the summer including finishing up the garage and some other things I have up my sleeve. We've been eating pretty simply lately. I'm on a new medicine to help with my insulin levels and limiting carbs helps with the side effects. However, it is VERY difficult to give up carbs! I spent Monday and Tuesday this week eating just meat and vegetables and by Wednesday I was starving! I'm going to keep working on cutting them back, but I'm not yet strong enough to cut them out for good. Here's our belated menu for this week... and next week.
Sunday: Spaghetti and Meatballs, garlic bread
Monday: Chicken and Peppers (in a skillet, with olive oil... ain't no rocket science)
Tuesday: Kielbasa and Peppers (see above)
Wednesday: Fiesta Nachos, mexican rice, corn and homemade guacamole
Thursday: leftover mexican
Friday: Pork Tenderloin
Saturday: Leftovers
Sunday: pot roast
Monday: Hamburgers on the grill, corn on the cob, sweet potato fries
Tuesday: meatball subs, green beans
Wednesday: Peanut Chicken
Thursday: Pasta Salad (we'll add some chicken)
Friday: School's out! Out to eat somewhere to celebrate surviving!
